Chicken, Two Ways

With two cornish hens, my mom made two dishes for dinner:
Chicken Adobo
Because of the variety of the chicken, the vinegary flavor infused so well into the meat.

Chicken with Roasted Peppers and Carrots

The vegetables provided a nice, natural sweetness to the dish, while the tomato stew gave a great comfort-food feel.
